Chardonnay grapes for still wine are one of the most difficult variations to find in the UK. 2023 proved to be a wonderful vintage for Chardonnay that provided both ripeness and extremely high-quality fruit. This wine bursts lively acidity and vibrant green apple flavours from grapes grown in loamy, flint-rich soil in West Marden, West Sussex.
These grapes were macerated for an hour to extract the flavours and texture from the skins before being gently pressed. Fermentation took place at low temperatures, in neutral French oak (50%) and stainless steel tanks (50%). Full malolactic fermentation took place, followed by 7 months of lees ageing to add weight and complexity
