Hindleap Late disgorged blanc de blanc
Light golden in colour with soft, gentle bubbles, this wine has a savoury developed autolytic nose from over six years ageing on the lees. On the palate there is lime-zest freshness with a good mousse, flavour intensity and a creamy texture. Fresh lemon and lime citrus flavours form the backbone of the wine, along with red fruits and brioche characters leading to a balanced, long finish. The longer ageing on yeast lees, makes it richer, creamier, more refined and elegant.

Serve with : This wine is richer and more complex; the bubbles provide the perfect textural contrast to the smooth velvety texture of oysters, while the acidity pairs well with the richness of lobster.
